I spent this past Sunday night doing some procrastination on homework by busying myself in the kitchen experimenting with recipes. After sharing what I had made I was asked to share this recipe on the blog for others to enjoy. This was my first time making protein muffins and this week these muffins have been acting as the perfect fueling snack for the week. I am so happy to share the recipe with you all! 🙂
Preheat the oven to 400 degrees. Make sure you slice up the banana into small pieces before placing it into the mixture. Mix all of the dry ingredients together and then slowly add the wet ingredients into the mixture. Pour the batter into separate muffin tins and bake for 10-12 minutes. The amount of muffins you are going to get out of the batch depends on how high you pour the batter in each tin. I was able to fill 12 separate muffin tins. I always use the toothpick trick to see if they are done around 10. Let the muffins cool and then place them in a container for convenience to take during the week.
Here is just an example- I have a muffin as a snack in the middle of the day with a nut mix and/or with fruit. 🙂
