WIAW {Speed Dating}

Hey friends! How has your week been thus far? Our family Father’s Day party went off without a hitch thanks to these two (my parents)!

This week seems to be going by pretty steady compared to some slow weeks I’ve been having. A lot of change is happening on my end. I started a new law internship yesterday and have really been getting into my own summer routine. My legs have not been into running so much lately so I’ve really been spending my time with Pilates and Yoga. I am learning a lot about my body and challenging myself in new ways. Also, I’ve got the book worm bug (if that is even a thing! haha…)! I spent almost an hour in Barnes and Noble yesterday picking out some good reads. I just finished the Fault in Our Stars and am seeing the movie with friends tomorrow. Has anyone read the book or seen the movie!!! The book is really good and I have heard great things about the movie.

That is what is new with me, but what about you? What have you been loving lately- a new recipe, a new workout, a new hobby, a new book??

Of course you must be here for the eats of the week for WIAW (What I Ate Wednesday)! So let’s dive on in (what I often do with my plates of food)! I have been switching it up with my meals to give myself some variety. I love to see what others are sharing for their WIAW because it gives me ideas of what to make in the kitchen. It’s like speed dating, except with food 😉 Thanks Jenn, as always for hosting!

[Confession-I never make omelets, so Google was very helpful for my success. Omelet with spinach, waffle with yogurt, and a side of fruit!]

OhHH!, and my boyfriend comes home in just over a week from (a 6 week trip) Cuba! He had some Wifi a couple days ago and sent me some pics that I thought I would share with you all :). This lack of communication thing is MUCH harder than I expected.

  1. I have been eating a lot of the overnight oatmeal stuff- oatmeal, chia seeds, yogurt, fruit- I am liking it much more than I thought!

  2. that chicken salad looks really good! Do you have a recipe for it?

      I just kind of made it up on the spot. I mixed grilled chicken (sliced it into small pieces), chopped celery, onion,a few golden raisins, and a squirt of dijon mustard to coat it all. Use different amounts of the ingredients as desired.:)
