Happy Friday! So I left up the WIAW (What I ate Wednesday) post one more day so that people could submit votes for what 3 recipes I would be sharing. Today I am sharing one of the three..can you guess which one from the blog post title?? Yes, the fiesta salad!! It’s a mexican party and a healthy salad all.in.one.
This salad is perfect to make on a summer afternoon or the night before a full day at work. If you prep the ingredients the night before, place everything together in the morning (that way the chips aren’t soggy) and heat it all up in the microwave at the office. Everyone will surely be asking you what you have in that delicious bowl of fiesta goodness 😉

What you need-
- shredded cheddar cheese
- 1 lb of ground beef ( I usually cook the whole package and have leftovers to make beef tacos or goulash)
- taco seasoning mix
- tortilla chips (there is a whole grain option)
- black beans
- can of stewed tomatoes
- 1 tbsp of minced garlic
Prepare the ground beef over the stove until cooked and then mix the taco seasoning into it.
In a small pot over the stove, on medium heat, place in one can of black beans, one can of stewed tomatoes, and minced garlic. Heat the mixture until it becomes a salsa like consistency.
In a bowl place the lettuce down first, then add a layer of the tortilla chips (crushed into pieces), add the ground beef, place the salsa mixture over the top, and then sprinkle the cheddar cheese over the top. I like to then place the salad in the microwave for another 30 seconds to make the cheese soft.
